It’s actually a bit embarrassing how many recipe binders and cookbooks I own. I have so many that I keep them in several rooms; some in the kitchen, the den, and a spare closet. Spreading them out makes the quantity less shocking. I just can’t help myself, I love going through magazine and cookbooks looking for new recipes. Oh, I can’t forget to include Pinterest. I can spend hours on that site collecting pins! Believe me, I can justify keeping my collection for many reasons. The biggest reason is I prefer to eat at home, so I am always looking for something new to add to our menu. That’s a good one, right ? So, the other day I was going through one of my recipe binders and I came across a recipe that I love to make…Pasta e Fajioli
There are so many great reasons to add beans to your diet. Beans are a great source of protein and the B vitamin folate. Folate is needed to help keep homocysteine levels low, prevent birth defects, and helps prevent heart disease. Another bonus is they are a great source of soluble and insoluble fiber. Soluble fiber helps lower cholesterol levels and reduces your risk of heart disease. Insoluble fiber is great for keeping you regular and maintaining a healthy GI system to help prevent colon cancer.
In addition to protein and folate, beans are a rich source of minerals, including iron, magnesium, potassium and zinc.
Rinsing canned beans is a great way to reduce the sodium content and helps get rid of the oligosaccharides that cause gas.

This is one of those recipes I normally wouldn’t write done because it is so easy to make. I’m glad I did, because I almost forgot about this little gem. I use to eat this a lot! I’m so happy I found it again!
This dish is so hearty and filling that you won’t miss having meat.
