Warm Butternut Squash Quinoa Salad

Butternut squash, a type of winter squash, is a great source of carotenoids, a group of antioxidants that includes alpha and beta carotenes. Beta-carotene is the precursor of vitamin A, which is essential for eye health. Vitamin A helps prevent night blindness. 

Butternut squash also provides fiber, potassium, vitamin C, folate, magnesium, iron, and calcium.

Warm Butternut Squash Quinoa Salad

  • 1 cup roasted butternut squash
  • 1 cup red quinoa
  • 2 cups vegetable broth
  • 1 cup fresh baby spinach
  • 1 small lime, juiced
  • 2 oz walnuts, chopped
  1. Bring 1 cup of quinoa and 2 cups of vegetable broth to a boil in a small saucepan. Reduce heat and cover. Simmer for 15 minutes.
  2. In the last 2-3 minutes of the quinoa cooking time, add the spinach on top of the quinoa and recover.
  3. Combine quinoa, spinach, and butternut squash in a large bowl.
  4. Juice the lime over the salad, toss to combine.
  5. Top with walnuts and serve warm.

Warm Butternut Quinoa Salad

You will love this Warm Butternut Squash Quinoa Salad! I love the roasted butternut squash, it is lightly caramelized on the outside and creamy on the inside. The red quinoa, spinach, and walnuts add beautiful color, a delicious texture, and flavor to the salad.  Its bright colors and flavors will make your eyes and mouth happy. 


  1. Yes! Yes! I always have to laugh when people tell me they are watching their weight and order a salad. With loads of cheese, a cup of dressing, and a bag of croutons! I hate to tell them that sometimes they’d be better off eating what they really wanted in the first place! Lol!!

  2. Caramelised butternut squash sounds out of this world amazing! I have to try that next time I’m adding it to a salad! And quinoa too. I love it so much, yet I have never put it in my salad :O It looks super delish, filling and healthy, so you bet I’ll try it next time 😉

    • Consuelo, caramelized is they only way I get my husband to eat butternut squash. At first he thought it was sweet potatoes. lol Either way, it pairs so perfectly with the quinoa, spinach, and walnuts.
