We love to grill. We have always lived in the southern states where the weather is almost always nice and you can grill year round. After moving to Colorado, we found it is not so easy to grill as often. It seems that for more than half the year we have snow.

That doesn’t stop us…we are determined grillers!

We are actually so crazy about grilling we shovel a path to our grill and knock the snow just to get to it.  Sadly, there were a few times where we wanted to grill, but the cover was frozen stiff and it wouldn’t come off.

Now that it is finally Summer we don’t have to worry about that anymore. We are out grilling several meals a week.

I love to grill a little extra to make a quick-lunch later in the week.

The only problem with pre-cooking is my guys don’t like leftovers.

I call them time-savers, while my son calls them old food. So, I have to reinvent my precooked food so that it is so flavorful that they forget.

These Honey Lime Chicken Quesadillas are one of my favorite ways to use extra grilled chicken. I love this chicken marinade. It gives the chicken a wonderful sweet and tangy flavor.

Add in some delicious grilled chicken to a toasted tortilla with hot melted cheese and I feel like I’m having a feast!

Top these with some freshly made avocado salsa and no one will realize they are having leftovers 😀

Chicken is famous for its high protein content. It contains all the essential amino acids, which are needed for the development of muscles. Chicken has all the B vitamins: B1, B2, B3 (Niacin), B5, B6, B12, folate, biotin, and choline.

We eat a lot of chicken around here so it is nice to know that it is rich in selenium, along with providing zinc, copper, phosphorus, magnesium, and iron.

To reduce both fat and calories, remove the skin and trim away visible fat. Skinless chicken has 55% less fat than chicken with the skin.

Grilled Honey Lime Chicken Quesadillas

Serves: 6
  • ½ cup fresh lime juice
  • ¼ cup honey
  • ½ tsp paprika
  • ½ tsp kosher salt
  • ½ lb boneless, skinless chicken breasts, trimmed of fat
  • 6 spelt or wheat tortillas
  • 1 cup Mexican cheese blend
For Marinade
  1. Combine lime juice, honey, paprika and salt with a whisk in a small bowl.
  2. Place chicken in a large resealable bag. Pour marinade over the chicken.
  3. Marinate chicken in refrigerator for at least 30 minutes.
  1. Preheat grill to medium. Spray grill with non-stick cooking spray or rub oil on grate.
  2. Grill chicken to an internal temperature of 165°, about 5 minutes on each side.
  3. Allow chicken to rest 2-3 minutes before serving.
Assemble Quesadilla
  1. Dice cooked chicken into ½ inch cube; set aside.
  2. Heat skillet over medium high heat. Heat tortilla on each side for 30 seconds.
  3. Equally divide and arrange chicken and cheese on half of each tortilla.
  4. Fold tortilla in half and toast in skillet over medium high heat. Flip to toast other side.
  5. Cut each tortilla into 4 quesadillas. Serve with salsa or pico de gallo.

    • Ha, every time we head out to grill with snow everywhere I think our neighbors are thinking, “there go those crazy people again”. It’s totally worth it! I love the flavor of grilled foods.

  5. Hi Cindy! I love your new twist on “dillas” That honey lime flavor you’re adding sounds delicious (translation…you’re adding taste not calories to the food, yay!) We eat a ton of chicken over here trying to stay healthy and we do (Buffalo, NY, hehe) find ourselves grilling unashamed in the snow. But I disagree with your family on the warmed up food, my husband says Dillas make for the best reheat ever! He loves these leftover! Thanks for sharing! And yes to the selenium please….bonus spin.

    • Oh, believe it girl! There will be snow everywhere except a clear path straight to the girl. Everything gets shove on the otherwise so it’s a huge mound. Haha
      I don’t know where they get this old food stuff from. It’s not bad, just made a day ahead. They are so spoiled…sometimes I feel like I have to be on stealth mode to sneak my pre-made food in. Thankfully these are so good you’d never know 😀

We have leftovers all the time – and sometimes the second meal is actually better than the first! We LOVE to grill (though not when the cover is frozen!) and I can’t wait to try this marinade.     • Gretchen, I seriously don’t know where they get some of the stuff they say. They are so bad about not wanting to eat leftovers that I have to aim to just make enough for one meal. Personally, I love when the flavors really blend together and then the 2nd time is even better. These guys just don’t get it. Haha

  20. We’re huge grillers too! We’re spoiled here in California and I can grill pretty much year round. Our grill is just about on it’s last leg, and I’ve been window shopping for a new one.

  23. We keep the grill out all year too, although in Massachusetts we definitely are trudging through snow sometimes. I grill chicken once a week and then my husband slices it for sandwiches, instead of buying deli meat. I bet he would absolutely love a honey lime chicken. Yay for leftovers!

    • Oh, you surely get more snow than we do. It never seems to fail that when I plan a grilled meal it will snow like crazy. Then it’s hurry get the cover off before it freezes. Haha

  24. Hahah “old food”! Growing up it was my specialty to make delicious meals out of left overs…and they usually involved lots of cheese! This quesadilla looks delicious! You are hard core grillers – makes me feel guilty that I live in Atlanta and never use the grill!

    • That’s one talent I really wish I had. I can’t believe you never use your grill. The weather is almost always perfect grilling weather. 😀

    • In Texas we called it bar-b-que. But that meant using charcoal and an open fire. We say grilling when you use propane. Either way, any name… its all good 😀

      You know you are a serious griller when you are shoveling snow just to get to your grill, right? One time there was so much snow it was so hard to move. We practically had to dig to move the snow. We ended up with a big mound next to the grill. But, we got to the grill. 😀
