Grilled Honey Lime Chicken Quesadillas

Grilled Honey Lime Chicken Quesadillas...a quick and delicious way to use pre-cooked chicken | Pick Fresh Foods

We love to grill. We have always lived in the southern states where the weather is almost always nice and you can grill year round. After moving to Colorado, we found it is not so easy to grill as often. It seems that for more than half the year we have snow.

That doesn’t stop us…we are determined grillers!

We are actually so crazy about grilling we shovel a path to our grill and knock the snow just to get to it.  Sadly, there were a few times where we wanted to grill, but the cover was frozen stiff and it wouldn’t come off.

Now that it is finally Summer we don’t have to worry about that anymore. We are out grilling several meals a week.

I love to grill a little extra to make a quick-lunch later in the week.

The only problem with pre-cooking is my guys don’t like leftovers.

I call them time-savers, while my son calls them old food. So, I have to reinvent my precooked food so that it is so flavorful that they forget.

These Honey Lime Chicken Quesadillas are one of my favorite ways to use extra grilled chicken. I love this chicken marinade. It gives the chicken a wonderful sweet and tangy flavor.

Add in some delicious grilled chicken to a toasted tortilla with hot melted cheese and I feel like I’m having a feast!

Top these with some freshly made avocado salsa and no one will realize they are having leftovers :D

Chicken is famous for its high protein content. It contains all the essential amino acids, which are needed for the development of muscles. Chicken has all the B vitamins: B1, B2, B3 (Niacin), B5, B6, B12, folate, biotin, and choline.

We eat a lot of chicken around here so it is nice to know that it is rich in selenium, along with providing zinc, copper, phosphorus, magnesium, and iron.

To reduce both fat and calories, remove the skin and trim away visible fat. Skinless chicken has 55% less fat than chicken with the skin.

How come they don’t like leftovers?? Shocker. I find that everything tastes much better the day after haha! These quesadillas look brilliant! That flavor combo is surely a winner!

  3. Nothing beats a good quesadilla! I’m loving all the flavors you’ve got going on here. Makes me want to try grilling the quesadillas as well :). We are determined grillers too by the way – no matter how cold it gets in MN, we are out there flipping our burgers, ha!

    • Ha, every time we head out to grill with snow everywhere I think our neighbors are thinking, “there go those crazy people again”. It’s totally worth it! I love the flavor of grilled foods.

  4. Soooo good to know that you are able to grill!!!! This looks ABSOLUTELY incredible Cindy!!!!! I’m lovingggggg the honey lime chicken and the addition of cheese makes everything better! YUmmmmm!

  5. Hi Cindy! I love your new twist on “dillas” That honey lime flavor you’re adding sounds delicious (translation…you’re adding taste not calories to the food, yay!) We eat a ton of chicken over here trying to stay healthy and we do (Buffalo, NY, hehe) find ourselves grilling unashamed in the snow. But I disagree with your family on the warmed up food, my husband says Dillas make for the best reheat ever! He loves these leftover! Thanks for sharing! And yes to the selenium please….bonus spin.

    • Thanks Laura :D I love chicken and spaghetti as leftovers. Plus, I love the convenience of making foods ahead of time. I wish they weren’t so picky.
Love that you too grill in the snow :D

  6. Those look awesome Cindy! I just saw another amazing quesadilla today too… anddddd… now I want quesadillas for dinner! YUM! Gorgeous pics too girl! :)

    • Funny, it always seem to happen that everyone posts similar foods. Great minds…
I’m craving me some burgers today :D
      Thanks Krista

  7. Ha ha my husband is so happy that the Spurs won and not the Heat! These quesadillas are screaming summer to me with the lime in it! Love the flavor combination!

    • We lived in SA for a long time and loved watching the Spurs. So, yeah we were pretty happy :D
Thanks Gayle, this flavor combination is fantastic. Hope you give it a try :D

  8. I love a good quesadilla, and these look great! The lime and honey combo sounds delicious, and I’m a huge fan of grilling. Everybody in my house would be happy with this meal, Cindy!

  9. I love the simple and flavorful marinade! These quesadillas look wonderful, especially when topped with that colorful pico de gallo. You’ve got me craving these!

  10. That is too funny, I can just imagine you shoveling a path to the grill in a few feet of snow! You really are a dedicated griller, haha! I feel very fortunate to live where I can grill year round, and I take full advance of it! That is too bad you boys don’t like leftovers, “old food” haha. It looks like you did a great job disguising these leftovers! Honey lime chicken sounds so good! My husband loves chicken quesadillas, I will have to make these for him!

    • Oh, believe it girl! There will be snow everywhere except a clear path straight to the girl. Everything gets shove on the otherwise so it’s a huge mound. Haha
I don’t know where they get this old food stuff from. It’s not bad, just made a day ahead. They are so spoiled…sometimes I feel like I have to be on stealth mode to sneak my pre-made food in. Thankfully these are so good you’d never know :D

  11. These look really tasty! That’s dedication using the grill even in the snow!

  12. Lol! Old food! That’s hilarious! I thought you we going to say they didn’t like leftovers so they ate everything (growing kids!) – not because it was ‘old food!’ That’s hilarious! We have leftovers all the time – and sometimes the second meal is actually better than the first! We LOVE to grill (though not when the cover is frozen!) and I can’t wait to try this marinade. Looks delish!!

    • Gretchen, I seriously don’t know where they get some of the stuff they say. They are so bad about not wanting to eat leftovers that I have to aim to just make enough for one meal. Personally, I love when the flavors really blend together and then the 2nd time is even better. These guys just don’t get it. Haha

  13. These look so good, Cindy! I love quesadillas, the chicken in this recipe looks perfect. By the way, grilling just makes food so much better. I don’t blame you for digging through the snow to get to the grill ;)

    • Thanks Danielle :D Somethings are just worth the extra effort. I love when the weather turns nice and we can grill without that extra effort. Then we go crazy, grilling several meals a week! It makes kitchen clean up so much easier too :D

  14. We love to grill as well. I think we’re the only ones on my block that have the grill going year round. Great quesadilla recipe Cindy. Yum

    • Thanks Kathy! You know exactly what I mean :D When you love to grill you do whatever you have to. Never mind what the neighbors may be thinking :D

  15. Oh, how I love quesadillas. These are definitely calling out to me. And grilled? Girl, you’re speaking my language. Love these, Cindy!

  16. These looks beautiful and delicious Cindy! And I love this –>I have to reinvent my precooked food so that it is so flavorful that they forget. Hahahaha! I know how you feel!

  17. There is something SO satisfying and delicious about quesadillas, even if there are “old food” components in them (too funny, btw!) Honey lime sounds like a fab flavor paired with chicken, too!

    • Aren’t they crazy. Leftover sounds so much better than old food. I guess that really says how much they don’t like them. Haha
      Thanks Alyssa! It’s a great marinade :D

  18. My husband loves to grill even in the snow too hehe. Love these quesadillas Cindy, what a perfect use of leftovers – my guys would definitely love these too :)

  19. These quesadillas sound amazing!

  20. We’re huge grillers too! We’re spoiled here in California and I can grill pretty much year round. Our grill is just about on it’s last leg, and I’ve been window shopping for a new one.

These honey lime chicken quesadillas sound delicious! I just love quesadillas!

    • Ah, yes you have beautiful weather out there. I’d be grilling non-stop. We lived in Newport Beach and our grill slowly got eaten by the salty air. Good luck picking a new one. :D

  21. I husband loves to grill even when is very cold outside ;-) ! Your quesadillas look delish, Cindy! Love it ;-)

  22. What a delicious way to repurpose leftovers! I’d love your quesadillas for dinner :)

  23. We keep the grill out all year too, although in Massachusetts we definitely are trudging through snow sometimes. I grill chicken once a week and then my husband slices it for sandwiches, instead of buying deli meat. I bet he would absolutely love a honey lime chicken. Yay for leftovers!

    • Oh, you surely get more snow than we do. It never seems to fail that when I plan a grilled meal it will snow like crazy. Then it’s hurry get the cover off before it freezes. Haha
I love the idea of using grilled chicken instead of deli meat. I’m not a big fan of that stuff. Super idea! Thanks :D

  24. Hahah “old food”! Growing up it was my specialty to make delicious meals out of left overs…and they usually involved lots of cheese! This quesadilla looks delicious! You are hard core grillers – makes me feel guilty that I live in Atlanta and never use the grill!

    • That’s one talent I really wish I had. I can’t believe you never use your grill. The weather is almost always perfect grilling weather. :D

  25. I’m totally obsessed with grilling -although, in Canada, we always call it barbecuing lol. Same thing! I love it and will totally grill in the cold weather too. Great recipe and photos, Cindy!

    • In Texas we called it bar-b-que. But that meant using charcoal and an open fire. We say grilling when you use propane. Either way, any name… its all good :D

  26. I admire your grilling dedication…and I think leftovers are not only delicious but lifesavers for busy days! Chicken quesadillas are always welcomed, and that honey/lime marinade sounds so, so good!

  27. I love left overs! This hy make the perfect lunch :)

    • I’m being to think that almost everyone likes leftovers. They definitely make busy times easier and are great for a quick lunch. I just need to keep convincing my kids. :D

  28. That’s funny, Cindy, that your family don’t like leftovers. My hubby is a bit like that so it’s a great idea to ‘hide’ them in a new dish – especially one as tasty-sounding as this! I love the simplicity of these, too! :-)

  29. That is so crazy your grill was frozen shut! I can’t imagine! I don’t think I have ever experienced cold or snow like that! I love the ingredients you used. Honey and lime go so well together. I bet this is a perfect summer dinner!

    • Thanks Annie :D it does get crazy cold for me. Usually our snow is pretty dry, but when it does come down wet everything freezes quickly!

  30. I love good quesadillas! These look so delicious!

  31. This looks delicious Cindy! I’m a grill lover, and I could so see making these on it. Love the summer flavours going on here.

  32. We love quesadillas. I like the honey lime combination. I definitely want to try this. Beautiful photos too!

  33. They look delicious. I admire your determination to grill! I love grilling too. Fortunately I live in socali where we can grill all year long.

    • I love socali! It is always beautiful weather there. Perfect for being outdoors and great for grilling :D Thanks Kim

  34. My son says the same thing about leftovers! The honey-lime marinade sounds amazing.

  35. Love quesadillas… simple, delicious and healthy recipe.. perfect summer recipe… :)

  36. Hi Cindy,
I was laughing when I read about you shoveling a path to the grill because we have done the same thing more than once!
This dish looks so fresh and delicious and your photography is gorgeous!
I saw your link at Saturday Night Fever and just had to come take a peek. Your blog is beautiful and you have a new follower.
Thanks for a great recipe :)

    • Thanks Robyn! I’m so happy that you came on over :D
You know you are a serious griller when you are shoveling snow just to get to your grill, right? One time there was so much snow it was so hard to move. We practically had to dig to move the snow. We ended up with a big mound next to the grill. But, we got to the grill. :D

  37. that first pic is everything my friday needed – looks amaze Cindy!!
