Today is the final day of our winter break. It always makes me a little sad when my kids have to go back to school. It’s so nice to have everyone home, even if they spent nearly every minute secluded in their bedrooms. What is it with pre-teens and teenagers that make them want to stay in their rooms? There are some days when I feel like an empty-nester. It’s just me and my hubby hanging out together, with both kids hiding upstairs. I don’t remember spending so much time in my room as a teen. Is this normal?!
One thing that is sure to bring them out of their caves is something tasty baking in the oven. The wonderful aroma drifts through the house and soon enough…doors open and children appear!
Muesli… I love this stuff 😀 If you haven’t had this, muesli is a mixture of whole grains wheat, rye, barley, oats, dates, sunflower seeds, raisins, flaxseed, almonds, and walnuts. I’d say it is similar to uncooked granola, with added fruits and nuts. I like Bob’s Red Mill Muesli because it doesn’t contain anything artificial nor any preservatives.
Whole grains such as oats can help lower blood cholesterol levels and the soluble fiber helps to prevent a spike in blood sugar levels after a meal.
We need anywhere from 20-35 grams of fiber everyday, starting with breakfast is always a great idea- if you plan on meeting your full intake.
The Institute of Medicine guidelines for dietary fiber are:
Women (Age 50 and younger) – 25 grams/day
Women (Age 51 and older) – 21 grams/day
Men (Age 50 and younger) – 38 grams/day
Men (Age 51 and older) – 30 grams/day
This recipe is super easy to make for breakfast or a snack. I use unsweetened applesauce and vanilla almond milk for some moisture and flavor. You will also notice that I let it muesli and oats sit while the oven is heating. This allows the grains to absorb the liquids to ensure that they are soft for baking.
- 1 cup muesli
- 1 cup old-fashioned oats
- 2 tbsp light brown sugar
- ½ tsp baking powder
- ½ tsp ground cinnamon
- ⅛ tsp salt
- 1 large egg, beaten
- ⅓ cup unsweetened applesauce
- ½ tsp vanilla extract
- 1 cup vanilla almond milk
- In a large mixing bowl combine muesli and oats. Add in brown sugar, baking powder, cinnamon, and salt. Stir to combine.
- Stir in egg, applesauce and vanilla to bowl.
- Pour in milk, stir until combine.
- Heat oven to 375 degrees
- Pour muesli mixture into an 8 x 8 baking dish coated with non-stick spray.
- Bake for 25-30 minutes or until tester comes out clean.
- Cut into 9 bars.
These Baked Muesli Oatmeal Bars are delicious! They are so fragrant and soft, almost like a muffin. Every bite is filled with oats, nuts, and raisins. These are sure to keep you full and satisfied. You can store these in the refrigerator in a sealed container for several days. Microwave for 30 seconds and they are just as delicious as when they came out of the oven.
