My best way of dealing with craziness is to get in the kitchen. Cooking and baking always makes me feel good and happy.
So, apparently my list of things going wrong while my husband is away continues. This time was just heartbreaking. I went to put my wedding ring on and noticed the diamond was leaning over. One side of the setting cracked.
It is the most bizarre thing ever. I have no idea at all how it happened. I didn’t hit my hand, slam it in a door, or get caught in anything. I wore it the day before and I think it was okay.
I was pretty sad for a couple of days. Thankfully, I found a family owned and operated jeweler in our little town and they fixed it! They were so awesome. At first, they said it would be ready in 5 days. The next day they called and said it was fixed.
I was so touched that they understood that it was important to me and worked on it right away. I was so happy, I cried when I got it back.
After all that, I need some serious mood changing activity! I head to the kitchen to whip up something delicious.
Our weather is a bit wacky here. Some days it doesn’t get about 65 degrees F. and other days it is so sunny and hot. It is on those hot days that I really notice a temperature difference inside when I run the oven. I know it’s a little crazy to hear a Texas girl complain about heat, but I don’t like the heat one bit.
But, what I do like is pizza and in order to have my pizza without heating up the house, I figured out how to cook pizza on the stovetop.
This was one of those moments where you have an idea and wonder if it will work. Well, it did and it is delicious!!
I made my favorite pizza dough and it worked just as perfectly as it does in the oven. I was concerned that the crust wouldn’t be as crisp in a skillet, but it is perfect.
I heated my regular non-stick skillet on medium heat and cooked the dough on both sides until it was lightly browned. Added my toppings and placed under the toaster for the cheese to melt.
Seriously, this cooks in a fraction of the time it takes to bake a pizza. I’m talking less than 5 minutes to have a delicious pizza!
I was so excited! The crust is perfectly crisp and chewy.

We love these pizzas! Since they cook so quickly, it is so easy to make a different variety with little effort. Margherita is my favorite and my kids love a traditional pepperoni, so we all were able to have what we wanted.
I used a 9-inch skillet , but you could choose what ever size you like and form the dough to fit that pan.

- cup warm water (100° to 110°)
- 10 ounces bread flour (2 cups )
- 1 package dry yeast (about 2¼ teaspoons)
- 1 Tbsp olive oil
- ½ tsp kosher salt
- Weigh or lightly spoon flour into dry measuring cups and spoons; level with a knife. Add flour, salt and yeast to large bowl. Add olive oil to one side of bowl. Slowly add in water and stir with wooden spoon to combine.
- Once dough comes together, place on lightly floured counter and knead to form soft elastic dough. Place dough in large bowl lightly coated with olive oil. Gently roll dough around bowl to coat. Cover and let rise for 1 hour or until doubled in size.
- Divide dough into 4 equal pieces.
- Press or roll dough into a 8 inch circle on a lightly floured counter-top.
- Preheat pan on medium heat. Cook pizza dough for 1-2 minutes on each side.
- Add toppings and place under toaster/broiler for 1-2 minutes or until cheese is melted.
