Ingredients
1 cup quinoa
1 Tbsp olive oil
½ cup onion, diced
1 clove garlic, minced
1 tsp ground cumin
1 (15-ounce) can black beans, rinsed and drained
1 cup grape tomatoes, sliced in quarters
Juice of half a lime
salt & pepper
½ cup fresh cilantro, chopped
Instructions
Rinse quinoa in cold water and drain well.
In a medium saucepan add 2 cups vegetable broth and 1 cup of quinoa. Bring to a boil, then cover and reduce heat. Simmer about 15 minutes or until liquid is absorbed.
After 10 minutes into cooking quinoa, begin preparing black bean mixture. In a large skillet heat 1 Tbsp olive oil.
