Apricot Glazed Chicken
 
 
Ingredients
  • 1 lb boneless skinless chicken breast, trimmed
  • ¼ tsp kosher salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • ½ cup low-sodium chicken broth
  • 4 fresh apricots, halved and sliced
  • ¼ cup apricot preserves
  • 1 tbsp balsamic vinegar
Instructions
  1. Sprinkle chicken breast with salt and pepper. Heat olive oil in a large skillet over medium high heat.
  2. Add chicken sauté until browned on both sides and cooked through, about 5 minutes on each side. Add broth to the pan.
  3. Mix apricot preserves and balsamic vinegar in a small bowl. Evenly spread mixture over each chicken breast. Add fresh apricots to pan and cook until glaze has thickened, about a minute.
  4. Serve each chicken breast with glaze and apricots.
