Cinnamon French Toast
 
 
Ingredients
  • 2 eggs, beaten
  • 1 cup skim milk
  • 1 Tbsp vanilla
  • 1 Tbsp light brown sugar
  • 2 Tbsp ground cinnamon
  • 1 french baguette, sliced 1 inch thick
  • unsalted butter
  • powdered sugar
  • low-sugar or lite syrup
Instructions
  1. In a large mixing bowl beat eggs. Add milk, vanilla, brown sugar and whisk to mix.
  2. Dip each piece of bread into mixture for about 10 seconds on each side. Allow excess mixture to drip off. I dip 3 pieces at a time, place on sheet pan and sprinkle with cinnamon.
  3. Heat a large skillet over medium high heat. Add half a tablespoon of butter to the pan. It will begin to foam and then begin turning brown. At this point place 2-3 pieces of bread in the skillet, cinnamon side down. Cook on each side for 3 minutes or until golden.
  4. Wipe skillet with a paper towel in between batches.
  5. Sprinkle with powdered sugar. Serve warm.
