Orecchiette Broccolini

Ingredients
  • 8 oz orecchiette pasta
  • 1 bunch broccolini, rinsed and trimmed
  • 1 tsp olive oil
  • ½ cup onion, diced
  • 1 clove garlic, pressed
  • 1 can great northern beans, drained and rinsed
  • 1 tsp dried basil
  • 1 cup vegetable broth
  • ¼ tsp black pepper
  • Shredded Parmesan Cheese
Instructions
  1. Cook pasta according to package directions.
  2. Heat olive oil to medium sauté pan. Add onions and garlic, sauté until fragrant.
  3. Stir in beans and basil, toss to coat. Add in vegetable broth and black pepper. Simmer for about 5 minutes.
  4. Add in broccolini and cook for another 2 minutes. Broccolini should be bright green and still crunchy.
  5. Serve Broccolini mixture on top of orecchiette.
  6. Top with shredded parmesan cheese.
