Apple Quesadillas

Ingredients
  • 4 medium Jazz apples, thinly sliced
  • 1 tablespoon lemon juice
  • ¼ cup sugar, divided
  • 1 (8-ounce) package reduced-fat cream cheese, softened
  • 1 (14-ounce) can fat-free sweetened condensed milk
  • 1 tsp vanilla extract
  • 6 spelt tortillas
  • 2 oz chopped walnuts, toasted
  • 1 tsp ground cinnamon
Instructions
  1. In a small bowl combine sliced apples with lemon juice and 3 tablespoons of sugar.
  2. Heat a large non-stick skillet over medium heat. Coat pan with cooking spray. Add apples and cook just until tender. Transfer apple mixture back to bowl, and set aside. Wipe the skillet clean with a damp paper towel. Return skillet to stove top and heat on medium low.
  3. Combine cream cheese, condensed milk, and vanilla in a medium bowl. Whisk until smooth.
  4. Place 1 tortilla in skillet coated with cooking spray over medium low heat; spread with about 2 tablespoons of cream mixture. Heat for a minute.
  5. Layer some apples on one half of tortilla. Sprinkle with about a few walnuts.
  6. Fold tortilla in half; cook on each side until browned. Prepare remaining tortillas in the same manner.
  7. In a small bowl stir together the remaining sugar and cinnamon. Sprinkle over warm quesadillas.
  8. Cut each quesadilla into 4 wedges.
