Butternut Squash Salad with Cranberries, Walnuts and Feta Cheese

Ingredients
  • 1½-pounds roasted butternut squash, ¼-inch diced
  • 5 oz mixed baby green salad
  • ¼ cup dried cranberries
  • ½ cup walnuts, toasted and chopped
  • ½ cup reduced fat feta cheese
  • Vinaigrette
Instructions
  1. In a large bowl add the mixed baby greens in a large salad bowl.
  2. Add the roasted butternut squash, cranberries, walnuts.
  3. Drizzle just enough vinaigrette to lightly moisten salad, toss well.
  4. Sprinkle with Feta cheese.
