Fiesta Roasted Chickpeas

Serves: 8- ¼ cup servings
- 2 15-oz cans reduced sodium chickpeas (garbanzo beans), drained and rinsed
- 1 tbsp extra-virgin olive oil
- ½ tbsp kosher salt
- 1 tbsp paprika
- 1 tsp garlic powder
- ½ tsp ground cumin
- ½ tsp black pepper
- Preheat oven to 400 degrees.
- Drain and rinse chickpeas. Remove skins by pinching or rubbing with a paper towel.
- Place onto a small baking pan.
- In a small bowl combine salt, paprika, garlic powder, cumin, and pepper together.
- Drizzle with olive oil.
- Sprinkle with the season mix.
- Bake for 45-50 minutes, or until crunchy. Let cool 5-10 minutes.
- Store in a sealed container.
