Fiesta Roasted Chickpeas

Serves: 8- ¼ cup servings
Ingredients
  • 2 15-oz cans reduced sodium chickpeas (garbanzo beans), drained and rinsed
  • 1 tbsp extra-virgin olive oil
  • ½ tbsp kosher salt
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • ½ tsp ground cumin
  • ½ tsp black pepper
Instructions
  1. Preheat oven to 400 degrees.
  2. Drain and rinse chickpeas. Remove skins by pinching or rubbing with a paper towel.
  3. Place onto a small baking pan.
  4. In a small bowl combine salt, paprika, garlic powder, cumin, and pepper together.
  5. Drizzle with olive oil.
  6. Sprinkle with the season mix.
  7. Bake for 45-50 minutes, or until crunchy. Let cool 5-10 minutes.
  8. Store in a sealed container.
