Quinoa with Edamame and Mushrooms

Ingredients
  • 1 cup red quinoa, rinsed
  • 2 cups vegetable broth
  • 1 tbsp extra virgin olive oil
  • 1 cup baby bella mushrooms, sliced thin
  • ¼ tsp ground black pepper
  • 2 garlic cloves, pressed
  • 1 cup shelled edamame
  • 4 green onions, sliced thin
  • 1 fresh lime, juiced
Instructions
  1. In a medium sauce pan add quinoa and vegetable broth; bring to a boil.
  2. Cover and reduce heat to low; cook for 15 minutes.
  3. When the quinoa is nearly done heat 1 tbsp of olive oil in a large skillet over medium heat.
  4. Add the mushrooms to the pan. Sprinkle with pepper. Cook the mushrooms until they slightly browned.
  5. Add the garlic to the pan and sauté until fragrant. Remove from heat.
  6. Combine cooked quinoa, mushrooms and edamame in a large serving bowl.
  7. Squeeze lime juice over quinoa; stir.
  8. Sprinkle green onions on top.
