Baked Rigatoni

Ingredients
For Sauce
  • ½ cup onion, diced
  • ½ cup carrots, diced
  • ¼ cup celery, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • 1-28 oz can crushed tomatoes
  • 1-8oz can tomato sauce
  • 1-6oz can tomato paste
  • 1 tbsp balsamic vinegar
  • ¼ cup water
  • 2 tsp italian seasoning
  • ½ tsp sugar
  • ¼ tsp crushed red pepper
  • 1 tsp salt
  • ½ tsp black pepper
For Cheese Layer
  • 1-12 oz package rigatoni
  • 1-15 oz container ricotta cheese
  • ¼ cup grated parmesan cheese
  • ¼ tsp ground nutmeg
  • 1 large egg
For Topping
  • 8 oz mozzarella cheese, shredded
Instructions
For Sauce
  1. In a large saucepan heat olive oil over medium-high heat. Sauté carrots, onion, and celery until slightly tender. Add garlic and sauté until fragrant.
  2. Add ground turkey and cook until browned.
  3. Add crushed tomatoes, tomato sauce, tomato paste, and balsamic vinegar.
  4. Add water through black pepper and stir. Bring to a low boil and let simmer for 10 minutes.
  5. In a small bowl combine ricotta, parmesan cheese, and egg; set aside.
  6. Cook rigatoni according to package directions. Drain and return to pot.
  7. Reserve 1½ cups of the meat sauce.
  8. Add remaining sauce to the pasta. Stir to combine.
Assembly
  1. Add ½ of the pasta mixture into a 9 x 12 baking dish.
  2. Spoon ricotta cheese over the pasta. Top with half of the mozzarella cheese.
  3. Top with the remaining pasta. Top pasta with the reserved meat sauce.
  4. Sprinkle with remaining mozzarella cheese.
  5. Bake uncovered at 375 degrees for 30 to 35 minutes or until hot and bubbly.
