Smoked Gruyère Macaroni and Cheese

Ingredients
  • 2 cups medium shell noodles, cooked
  • 2 slices whole wheat bread
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • 1½ cup 0% fat milk
  • 4 oz smoked Gruyère cheese, shredded
  • 3 oz white cheddar cheese, shredded
  • 2 slices bacon, cooked and diced
Instructions
  1. Cook pasta according to package directions.
  2. Place bread in a food processor and process into crumbs, set aside.
  3. In a large skillet melt butter over medium low heat. Once it is melted, whisk in flour. Continue whisking until it comes together. Add salt and pepper.
  4. Slowing whisk in milk a little at a time to prevent lumps. Taste and adjust seasoning as desired. Cook on low for 3-4 minutes, or until thickened.
  5. Once your pasta is cooked, drain it and return it to the pot.
  6. Add the cream mixture and shredded cheese, stir until cheese is melted.
  7. Add bacon and stir.
  8. Transfer macaroni and cheese into individual dishes and sprinkle with bread crumbs.
  9. Place in oven (350 degrees) and heat just until crumbs are toasted, about 4 minutes.
Notes
*If your oven has a toast feature use that setting instead of heating oven.
