Ingredients
  • 8 corn tortillas
  • 1 tsp kosher salt
  • 1 tsp vegetable oil
  • ½ lb ground turkey
  • 2 tbsp taco seasoning
  • ¼ cup water
  • 1 tbsp unsalted butter
  • 1 tbsp all-purpose flour
  • ¾ cup fat-free milk
  • ½ cup smoked gouda cheese, shredded
  • ½ cup shredded cheddar cheese
  • ¼ tsp ground turmeric
  • ¼ tsp paprika
  • 1 cup diced tomatoes
  • ½ cup pickled jalapeƱos
  • ½ cup sliced green onions
Instructions
  1. Preheat oven to 350. Stack tortillas and cut into fourths.
  2. Place on a baking sheet in a single layer. Lightly spray with cooking spray.
  3. Sprinkle with salt
  4. Bake 10-15 minutes or until chips are crisp.
  5. In a large skillet heat oil over medium heat. Add ground turkey and cook until browned.
  6. Sprinkle taco seasoning over meat and add water. Stir and let simmer until water is absorbed.
  7. In a medium saucepan melt butter over medium heat.
  8. Stir in flour to melted butter; cook for 1 minute.
  9. Slowly whisk in milk so there are no lumps.
  10. Add cheeses, turmeric, and paprika.
  11. Cook on medium-low heat until cheese is melted and sauce has thickened.
  12. Arrange chips on a plate. Drizzle the hot cheese over the chips.
  13. Top with the meat, green onions, and jalapeƱos.
