Loaded Nachos

- 8 corn tortillas
- 1 tsp kosher salt
- 1 tsp vegetable oil
- ½ lb ground turkey
- 2 tbsp taco seasoning
- ¼ cup water
- 1 tbsp unsalted butter
- 1 tbsp all-purpose flour
- ¾ cup fat-free milk
- ½ cup smoked gouda cheese, shredded
- ½ cup shredded cheddar cheese
- ¼ tsp ground turmeric
- ¼ tsp paprika
- 1 cup diced tomatoes
- ½ cup pickled jalapeƱos
- ½ cup sliced green onions
- Preheat oven to 350. Stack tortillas and cut into fourths.
- Place on a baking sheet in a single layer. Lightly spray with cooking spray.
- Sprinkle with salt
- Bake 10-15 minutes or until chips are crisp.
- In a large skillet heat oil over medium heat. Add ground turkey and cook until browned.
- Sprinkle taco seasoning over meat and add water. Stir and let simmer until water is absorbed.
- In a medium saucepan melt butter over medium heat.
- Stir in flour to melted butter; cook for 1 minute.
- Slowly whisk in milk so there are no lumps.
- Add cheeses, turmeric, and paprika.
- Cook on medium-low heat until cheese is melted and sauce has thickened.
- Arrange chips on a plate. Drizzle the hot cheese over the chips.
- Top with the meat, green onions, and jalapeƱos.
