Sweet and spicy come together in this delicious Fresh Pineapple Salsa recipe. It pairs perfectly with grilled chicken fajitas or as a stand- alone salsa.
The beginning of the April is always busy here in our house. Both of my kids have April birthdays, only 10 days apart. So, over the weekend we celebrated my son’s birthday. Now we officially have two teenagers in the house. Yes, please send your prayers.
I like to say I know a little bit about a lot of stuff. Then, I work to fill in the blanks. It also just happens that my husband is like this too.
Although unlike me, he has an amazing memory! Seriously crazy memory, like remembers names of actors in all types of movies, quotes from movies, names of bands, the musicians, and their songs. Me…I can’t remember why I got out of my chair. Haha
So my son received a new gaming system for his birthday. You know, a plug and play system. Why is it that it is never that simple?!
We get everything connected; run updates on this new system, and it won’t connect to the game server. If you have ever seen a kid turn from super excited to totally bummed, this was my son. His first response is to return it to the store.
Ah, but my husband and I are fixers. I think my husband is super smart and can fix just about anything on his own. Then, me the super obsessive type A person can’t stop until everything is right. Together our approach is always to try to solve problems and repairs on our own.
After a bit of testing and tinkering we determined the issue was with our router and not the system. After adjusting and testing we finally got the right settings on our router.
Hooray, his gift is up and running! My son was so happy and super impressed that we fixed the problem! We saved the day 😀
You know what else is super impressive? The delicious flavors of this Fresh Pineapple Salsa!
I love when I find fresh whole pineapple in the store. They are so flavorful and sweet. For this salsa I mix pineapple with a spicy jalapeño, a little red onion, cilantro, and fresh squeezed lime juice.
Now, you have a delicious, fresh, sweet, and slightly spicy salsa. It is fantastic on chips or on top of grilled chicken fajitas.
Our weather my not be looking like Spring, but this Fresh Pineapple Salsa will make you feel like the sun is shining on you!
