Tomatoes are such a versatile food. I love that you can find tomatoes in so many different shapes, sizes and colors. I am crazy for the bright yellow tomatoes 😀 Whether it be simply a salad or in a sauce…we eat a lot of tomatoes in our house. As usual, I just can not resist fresh produce. My last food shopping trip I bought a lot of tomatoes. 😀 So, I was looking for a meat-free dish that would be tasty and filling and came up with a Summer Tomato and Lime Rice Salad…
Tomatoes
Tomatoes have long been famous for their antioxidant properties that are found in Lycopene. Lycopene is a carotenoid that may help prevent some cancers and provide a variety of health benefits. A study found that consuming foods that contain the antioxidant Lycopene can help prevent osteoporosis in post-menopausal women.
The antioxidants found in tomatoes comes from vitamin C, and beta-carotene. You can also find lots of phytonutrients such as flavonones, flavonols, and carotenoids.
Consuming Tomatoes can help lower total cholesterol, LDL cholesterol, and triglycerides which can promote better heart health.

- 5 oz yellow cherry tomatoes
- 5 oz red cherry tomatoes
- 1 Tbsp fresh basil, sliced thinly
- 1 pkg Tasty Bite Thai Lime Rice
- ¼ cup extra-virgin olive oil
- 1 tbsp fresh lime juice
- ⅛ tsp Splenda
- Heat rice according to package directions. Place heated rice in a medium serving bowl.
- Rinse and slice tomatoes in half. Add tomatoes to rice.
- In a small bowl whisk together olive oil, lime juice and splenda. Pour over tomatoes and toss to coat.
- Top with sliced basil and serve.
I’m normally not a big fan of packaged foods. They often have lots of additives and preservative with names that often are too difficult to pronounce that they are often just abbreviated. The folks at Tasty Bite were kind enough to send me a few of their products to sample. Even after they told me there products were all natural, I have to admit at first, I was quite apprehensive. However, I was pleasantly surprised by the taste, appearance and quality of their Thai Lime Rice. It added a terrific boost of flavor to my tomato salad while still keeping it simple. 😀
I mixed together a little Lime dressing to go with my salad. This zesty and slightly sweet dressing added a perfect balance of flavors for the tomatoes with the rice. My Summer Tomato and Lime Rice Salad was the perfect meat-less meal for me. I love the colors of this salad! I’m a big fan of simple and delicious and this salad makes a wonderful presentation that is worthy enough to serve to guests or take to a potluck.
My Summer Tomato and Lime Rice Salad would be equally as delicious as a side dish to go along with grilled chicken…that might just be my next meal 😀
