Today is one of those days where I feel like I can barely get anything done. I have a tendency to bop from one thing to another without completing the first task…I’m easily side-tracked. 😀 I have been trying to decorate, organize a closet, vacuum, and do laundry all at the same time. Ugh! Then in the process of doing the laundry I knew I had once again confused my jeans for my sons’ jeans. These guys are growing so much that now my clothes look child size. I’m feeling really short. *sigh*
You know what isn’t short…the flavor of this amazing Waldorf Salad with Cranberries and Walnuts. I replace mayonnaise with greek yogurt to make a healthier version.
For a holiday version of waldorf salad, I added cranberries and walnuts. I’m thinking I’ll serve this at our Christmas party.
Apples contain nutrients that help slow down the digestion of carbohydrates. They also help reduce glucose absorption and increase insulin in the blood stream. These are important because they help regulate your blood sugar.
The fiber and antioxidants in apples are also great for improving your cardiovascular system! Research shows an apple a day can help lower your LDL and total cholesterol.
When selecting apples, choose firm apples with deep coloring. At home, store them in your refrigerator crisper. Apples are listed on the dirty dozen, so it’s best to purchase organic apples when possible. Apples provide the best nutrients when ate whole, raw, and unpeeled.
- ½ cup 0% fat plain greek yogurt
- 2 tsp honey
- 1 tsp vanilla extract
- 1 tbsp apple cider vinegar
- 2 medium jazz apples, diced
- 1 medium ambrosia apple, diced
- ¼ cup celery, sliced thin
- ¼ cup chopped walnuts
- ¼ cup dried cranberries
- In a medium bowl combine yogurt, honey, vanilla, and vinegar.
- Add diced apples and celery to yogurt, stir to coat.
- Sprinkle in the walnuts and cranberries, stir to combine.
- Serve chilled.
I used the apples I had on hand…ambrosia and jazz varieties. I also like granny smith apples in Waldorf salads, but with the greek yogurt I think sweeter apples work better. The greek yogurt gives the Waldorf salad a slight tartness that nicely balances out the sweet apples. I love the texture of the celery, walnuts, and cranberries mixed in with the salad. All these flavors and textures are sure to make your tastebuds happy. 😀
