This is a delicious salad version of a classic sandwich. I layer red grape tomatoes, bacon, avocado, and blue cheese on a bed of crisp romaine lettuce. Top it off with a delicious drizzle of Lemon Vinaigrette and lunch is ready.
We’ve been sitting out on the deck drinking an adult version of my Fresh Strawberry Lemonade. I add a little Cîroc coconut vodka and it is amazing!
The last few days have been beautiful around here and outdoors has been our favorite place to be. It is perfect! The birds are singing their songs and we are enjoying the warm sun.
I look up into the trees as a gust of wind comes in. I see a big cloud of dirt blowing. It only took me a couple of seconds to register the dirt is pollen. The wind kicks up and now big clouds of yellow are flying in the air.
You know those scary movies where you see someone with a frightened expression running away from something? If you can picture that, that was me. Sore muscles and all, I jump up and run towards the door.
I have horrible allergies and that pollen is my enemy. My daily allergy meds don’t stand a chance against all that fresh pollen.
I should have taken a picture to show you. Everything, and I mean everything has been covered in a blanket of yellow for days. I’ve never hoped for rain as badly as now.
Thankfully, my prayers were answered and we have gotten rain the past two days. Around here, rain also means cooler temperatures.
I don’t know if I will ever get use to our Colorado weather. I go from shorts and flip-flops back to jeans and long sleeved shirts. I had this grand plan of moving my winter clothes to another closet, but now I’m thinking that would be a mistake.
Even with these grey, cold days, we can still bring some summer in with food. Remember my Lemon Vinaigrette? Yes, well this is the salad that we enjoyed that with.
This salad is incredible! It is super easy to throw together and is full of fresh flavors.
We’ve taken the BLT sandwich and turned it into a salad! We layered, bacon, red grape tomatoes, creamy avocado, and blue cheese on a bed of crisp romaine lettuce. Finish it off with a delicious drizzle of my Lemon Vinaigrette and you have one colorful fresh meal.

- 1 head romaine lettuce, chopped
- 4 pieces cooked bacon, crumbled
- 16 grape tomatoes, halved
- ½ cup avocado, diced
- ¼ cup reduced fat blue cheese, crumbled
- Lemon Vinaigrette
- Divide lettuce among 4 plates.
- Add 1 piece of bacon, 8 tomato halves, 2 tbsp avocado, and 1 tbsp blue cheese on top of each plate of salad.
- Serve with lemon vinaigrette and enjoy.
