I hope everyone is having a lovely weekend and had a wonderful Thanksgiving. This was also the beginning of Hanukah, so Happy Hanukah my friends. There is much to be thankful for as throughout this holiday season and being with family is always at the top of my list. My kids are growing up fast. My son just got his driver’s learning permit and all I want is time to slow down. Funny how when you are a kid all you want is to grow up and as a parent you want them to stay young. Thankfully, they still like hugs and for me to take care of them, which always warms my heart.
Feeding my kids and teaching them to cook and eat nutritiously always makes me feel good. 😀 I just roasted some of that butternut squash I just showed you how to prep! Now that you know what to do…have you ever tried Roasted Butternut Squash in a salad? It is so delicious!!
I love the colors of this salad! Something this naturally colorful is definitely loaded with great nutrients!
Butternut Squash provides vitamin A, fiber, potassium, vitamin C, folate, magnesium, iron, and calcium.
Spinach is a major source of vitamin K, vitamin A, iron and folate. Vitamin C, vitamin E, beta-carotene, and manganese, zinc, and selenium are all antioxidants found in spinach.
Walnuts contain the minerals phosphorus, magnesium, and Vitamin E. Walnuts are the only nut that provides omega-3 fatty acids in the form of alpha-linolenic acid (ALA).
- 1½-pounds roasted butternut squash, ¼-inch diced
- 5 oz mixed baby green salad
- ¼ cup dried cranberries
- ½ cup walnuts, toasted and chopped
- ½ cup reduced fat feta cheese
- Vinaigrette
- In a large bowl add the mixed baby greens in a large salad bowl.
- Add the roasted butternut squash, cranberries, walnuts.
- Drizzle just enough vinaigrette to lightly moisten salad, toss well.
- Sprinkle with Feta cheese.
This is one of my most favorite fall time salads. It is a delicious combination of savory butternut squash, sweet cranberries, crunchy walnuts, and creamy feta cheese. It is the perfect way to recover from that big Thanksgiving feast 😀 I love this salad for lunch or anytime I’d like a light dinner.
