I like to have homemade cookies in the cookie jar, usually they are oatmeal chocolate chip cookies. Problem is, my son is the only one who eats them. My daughter will have 1 or 2 when they are hot out of the oven and then could care less. So, I’ve been playing around with this cookie recipe which has the chocolate chips my son likes and a chocolate cookie that my daughter enjoys. I think I have come up with some pretty amazing chocolate chocolate chip cookies! They have crisp edges, a soft center and every bite is filled with chocolately goodness.
I like using a portion scoop, aka cookie scoop, to make cookies. The tablespoon size, #40 seems to work the best for these cookies. Using a scoop helps create a uniform shape and aids in even baking.
- 2 cups all-purpose flour
- ½ cup Dutch-processed cocoa powder
- 1tsp baking soda
- ½ tsp table salt
- 1 cup unsalted butter (2 sticks), softened
- ¾ cup light brown sugar
- ¾ cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 12 ounces semisweet chocolate chips
- Combine flour, cocoa, baking soda and salt with a whisk in a medium sized bowl.
- In a mixer with beater attachment, cream butter with sugars. Add eggs and vanilla and mix until incorporated and fluffy.
- Slowly add flour mixture to creamed butter. Blend well.
- Add the chocolate chips, stir just until combined.
- Refrigerate dough for at least 30 minutes.
- Preheat oven to 350 degrees. Line two cookie sheets with parchment or silpat.
- Evenly space dough for 12 cookies by rounded tablespoon onto cookies sheets. I use a cookie scoop to insure a uniform shape.
- Bake 8-10 minutes.
For chewy center bake for 8 minutes. 10 minutes will result in a firmer cookie.
Slightly adapted from Cooks Illustrated.
I used Ghirardelli semi-sweet chocolate chips. These seemed to hold together through the baking better than other brands I have used. When baked they “look” like they aren’t melted but one bite and warm soft chocolate oozes out. How can you beat that?!
I love the warm chocolate chips…when you break these apart, they are so creamy. Have a napkin handy.
