Banana Nut Pancakes

Ingredients
  • 2 medium bananas, very ripe
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup whole white wheat flour
  • ½ tsp ground cinnamon
  • 2 tsp baking powder
  • 1 cup 0% fat milk
  • 2 oz chopped walnuts
Instructions
  1. In a large bowl mash bananas with a fork, until creamy.
  2. Add the egg and vanilla, stir to combine.
  3. To the bananas, add the flour, sugar,  cinnamon, and baking powder.
  4. Slowly add the milk and whisk to combine.
  5. Heat griddle on medium low heat. Lightly coat griddle with cooking spray.
  6. Pour ¼ cup of the batter on the griddle, cook for approximately 2- 2½ minutes.
  7. Repeat with remaining batter.
  8. Sprinkle with chopped walnuts.
Notes
Makes 10-12 pancakes.
