Warm Butternut Squash Quinoa Salad

Ingredients
  • 1 cup roasted butternut squash
  • 1 cup red quinoa
  • 2 cups vegetable broth
  • 1 cup fresh baby spinach
  • 1 small lime, juiced
  • 2 oz walnuts, chopped
Instructions
  1. Bring 1 cup of quinoa and 2 cups of vegetable broth to a boil in a small saucepan. Reduce heat and cover. Simmer for 15 minutes.
  2. In the last 2-3 minutes of the quinoa cooking time, add the spinach on top of the quinoa and recover.
  3. Combine quinoa, spinach, and butternut squash in a large bowl.
  4. Juice the lime over the salad, toss to combine.
  5. Top with walnuts and serve warm.
