Roasted Butternut Squash

Ingredients
  • 2 lbs butternut squash, peeled and cubed
  • 1 Tbsp extra-virgin olive oil
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper
Instructions
  1. Preheat oven to 400°F.
  2. Cut into 1-inch cubes. Transfer to a large, rimmed baking sheet.
  3. Toss with oil, salt and pepper and spread out in a single layer.
  4. Roast for about 30 minutes. Tossing occasionally, until slightly tender and golden.
