Butternut Squash Salad with Cranberries, Walnuts and Feta Cheese

- 1½-pounds roasted butternut squash, ¼-inch diced
- 5 oz mixed baby green salad
- ¼ cup dried cranberries
- ½ cup walnuts, toasted and chopped
- ½ cup reduced fat feta cheese
- Vinaigrette
- In a large bowl add the mixed baby greens in a large salad bowl.
- Add the roasted butternut squash, cranberries, walnuts.
- Drizzle just enough vinaigrette to lightly moisten salad, toss well.
- Sprinkle with Feta cheese.
