Roasted Sweet Potato Salad

Serves: 4-6
Ingredients
  • 2 large sweet potatoes, peeled and diced
  • 1 tbsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper
  • 4 pieces uncured, natural bacon (I like Hormel)
  • ¼ cup green onions, sliced
  • ¼ cup walnuts, chopped
Instructions
  1. Preheat oven to 400 degrees.
  2. Place diced sweet potatoes on a sheet pan lined with foil.
  3. Toss potatoes with olive oil and sprinkle with salt and pepper.
  4. Place bacon strips on one side of the same pan.
  5. Roast for 20-25 minutes or until bacon is crisp.
  6. Place sweet potatoes in a serving bowl.
  7. Chop bacon into small pieces; sprinkle onto potatoes.
  8. Top with green onions and walnuts. Toss to combine.
  9. Serve warm.
