Crock Pot Shredded Beef

Serves: 4-6
Ingredients
  • 5 lbs Tri-tip roast
  • salt and pepper
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • ½ cup water
  • 1 medium onion, sliced
  • 2 cups low-sodium beef broth
  • 1 tbsp soy sauce
  • 1 tbsp tomato paste
  • 2 bay leaves
Instructions
  1. Season beef with salt and pepper. In a large skillet heat olive oil over medium high heat.
  2. Add the beef to the pan and brown on both sides, about 8 minutes.
  3. Add the garlic to the pan and sauté until fragrant.
  4. Transfer beef to the crock pot and deglaze the pan with ½ cup of water, add to crock pot.
  5. Top beef with onions, beef broth, soy sauce and tomato paste. Stir to incorporate the tomato paste.
  6. Add the bay leaves and cover with lid.
  7. Set the crock pot to high and cook for 6-7 hours; or on low for 10-11 hours.
  8. Shred the beef with two forks, pulling with the grain of the meat.
