Roasted Tomato Salsa

Ingredients
  • 1 pound round tomatoes
  • 3 serrano peppers
  • 2 cloves garlic, unpeeled
  • ½ medium sweet onion, peeled and chopped
  • ½ cup chopped fresh cilantro
  • 1 tsp kosher salt
  • 1 small lime, juiced
Instructions
  1. Preheat broiler. Line a baking pan with foil.
  2. Clean and wash tomatoes and peppers.
  3. Place tomatoes, serrano pepper, and garlic on prepared pan.
  4. Place pan in the oven on the middle rack.
  5. Roast for about 10 minutes, turning once to get charring on both sides.
  6. Peel garlic and add to food processor along with onion. Pulse 5-6 times.
  7. Chop roasted tomatoes in half and add to food processor along with serranos (seed peppers to control spice level). Pulse 3-4 times for a chunky salsa.
  8. Add in cilantro, salt, and lime juice. Pulse a couple more times to combine.
  9. Makes about 2 cups
