Skillet Penne with Chicken, Broccoli, and Sun-dried Tomatoes

Ingredients
  • 1 lb boneless, skinless chicken breast, cut into 1 inch pieces
  • 1 tbsp olive oil
  • ½ cup onion, diced
  • 2 garlic cloves, pressed
  • 8 oz penne pasta
  • 2 cups water
  • 2 cup reduced sodium chicken broth
  • ¼ tsp dried oregano
  • ¼ cup sun dried tomatoes, chopped
  • 3 cup fresh broccoli
Instructions
  1. In a large skillet over medium heat brown chicken in olive oil.
  2. Remove chicken, cover with foil to keep warm. Add onions and garlic, sauté until garlic is fragrant.
  3. Add pasta to the skillet. Cover with water and chicken broth.
  4. Sprinkle in oregano.
  5. Bring to a boil then cover and reduce heat to medium low. Cook until pasta is nearly al dente, about 9 minutes.
  6. Return chicken to pan and stir into pasta. Top with sun dried tomatoes and broccoli.
  7. Cover and cook until broccoli turns bright green, about 1-2 minutes.
