Fresh Roasted Tomatillo Salsa

Ingredients
  • 1 lb fresh tomatillos
  • 3 fresh serrano peppers, stems removed
  • 2 garlic cloves, unpeeled
  • ½ cup fresh cilantro, chopped
  • 1 small sweet onion, chopped
  • 1 tsp kosher salt
  • 1 fresh lime, juiced
Instructions
  1. Preheat broiler. Line a baking pan with foil.
  2. Remove husk from tomatillos and wash them to remove the sticky coating.
  3. Place tomatillos, serrano pepper, and garlic on prepared pan.
  4. Place pan in the oven on the middle rack.
  5. Roast for about 5-7 minutes, turning once to get charring on both sides.
  6. Add roasted tomatillos, serranos (seed peppers to control spice level) to food processor. Pulse 2-3 times.
  7. Peel garlic and add to food processor along with cilantro, onion, salt, and lime juice.
  8. Pulse 5-6 times or until salsa is an even consistency.
  9. Makes about 2 cups
