It happened again! I bought some apricots that weren’t quite ripe. I figured that’s okay, I set them on counter and next thing I know they are overripe. They smell so sweet, but are just too squishy to eat raw. My solution is Golden Apricot Salad Dressing…
Apricots
Apricots are a good source of vitamin A, vitamin C, and dietary fiber. Apricots are rich in the antioxidants beta-carotene and lycopene which, are known to promote heart health and protect against several cancers.
Vitamin A: promotes healthy eyes, skin, hair, and teeth
Lycopene-rich foods: may reduce the risk of developing cancer
Beta-carotene: helps protect LDL cholesterol from oxidation

- 2 fresh apricots, chopped
- 2 Tbsp white wine vinegar
- 1 packet stevia or 1 Tbsp sugar
- ¼ tsp sea salt
- ¼ cup canola oil
- Place apricot in a bowl and puree with an emulsion blender.
- Add vinegar, stevia, and salt; blend.
- With blender running pour in oil. Blend just until combined.
I normally like to use olive oil when making a salad dressing, but here I found it over-powered the apricots. I opted for Canola oil. It’s mild flavor allowed the apricots to be the dominate flavor.
I paired my Golden Apricot Salad Dressing with a Spinach Salad topped with sliced pears, crumbled blue cheese, and walnuts. It flavor combination is amazing! The Golden Apricot Salad Dressing is smooth and slightly sweet, it is the perfect topping for any salad 😀
