Sometimes you just need to mix things up a little to change your mood. The weather can make me feel lazy or an overall blah. So, when I see that I am getting into a funk first thing I do is turn on some upbeat music. Then, I open all the blinds and let as much light into the house as possible. These two alone make a huge difference 😀 Finally, to crank it up a notch I make something that makes me think of warm sunshine…
A Tropical Pineapple Smoothie does the trick! It is light and perfectly refreshing 😀
Pineapple is an excellent source of vitamin C and manganese. It is also a good source of vitamin B1, vitamin B6, and fiber.
Vitamin C is needed in our bodies and is its primary water-soluble antioxidant. As an antioxidant, it protects our body against free radicals. Free radicals can attack and damage normal cells. Diets rich in vitamin C have been shown to be useful for preventing or reducing cardiovascular disease, cancer, and arthritis. Vitamin C has been famous for helping our immune system function properly to help prevent colds and flu.
Cut pineapple will retain its nutrients for about 6 days in the refrigerator.
To give the smoothie a little more dimension, I add a little mango. The flavor combination is unbelievably delicious!
- 1 cup ice
- 1 cup fresh pineapple, cut into chunks
- ½ cup fresh mango, cut into chunks
- 1 small banana
- 4 oz 0% plain greek yogurt
- 2 Tbsp milled flax seed
- ¾ cup water
- Add ingredients a blender in the order listed.
- Blend until smooth.
A little sunshine and this Tropical Pineapple Smoothie and you are quickly transported to a warmer place. 😀
