It’s finally Friday! We have 12 days until Christmas and I’m still running around like a mad woman. I wish I could be one of those people who get all their shopping done before Thanksgiving. Really, how do you amazing people get that done? On top of all the holiday happenings, I have one hormonal pre-teen child in my house that is making life more difficult than it needs to be. I know that I was bad. My mother would send me to my room and tell me not to come out until I was in a better mood. So, I guess what goes around, comes around. Lol
Regardless of the craziness, I just wanted to share with you this amazing Chicken Salad. I love to serve it at my Christmas Parties!
I love this combination of Chicken and Mangos. Mangos are in the same family as cashews and pistachios. Little strange, right? Well, what isn’t strange is how nutrient rich these sweet yellow-orange tropical fruits are. One cup of mango is a great source of vitamins A, and C, folate, B6 and it has 3 grams of fiber. Mangos also have great antioxidant like beta-carotene.
I replaced mayonnaise with greek yogurt. I love the combination of the yogurt and the chutney. It gives the salad a sweet and tangy flavor.
For food safety, I like to chill the salad well before I will be serving it. I also place my serving dish in the refrigerator. This helps keep the salad cold when it is served.
- 2 cups cooked chicken breast, diced
- ½ cup red bell pepper, diced
- ½ cup mango, diced
- ½ cup cilantro, minced
- 2 tbsp fresh lime juice
- ½ cup 0% plain greek yogurt
- ¼ cup Major Grey's Mango Chutney
- In a large mixing bowl combine chicken, bell pepper, mango, and cilantro. Add lime juice and stir to combine.
- In a small bowl mix yogurt and mango chutney. Pour over chicken mixture and gently stir to combine.
- Chill for at least 1 hour prior to serving.
- Serve on lettuce cups
This Mango Chicken Salad is so easy to prepare and is so flavorful and delicious! It has a wonderful texture combination with the chicken, soft mangos, and crunchy red bell pepper. I like to serve this Mango Chicken salad on romaine lettuce leaves. It gives a nice crunch and doesn’t take away from the flavors of the salad.
