I’m a sucker for kids trying to raise money or selling things. I’ve done a good job of making it through the gauntlet of girl scouts selling cookies at the entrances of our grocery stores. That is, up until Friday when I had to make a quick stop at the store. The temperature dropped to the low 20’s and it was snowing. There outside the store stood two girl scouts selling cookies! That’s serious commitment!! How I could I not help them out? I had to buy some cookies. 😀
In typical crazy Colorado weather fashion we had cold snowy weather Friday, then Saturday and Sunday were warm and sunny. Yesterday, was so warm you would have thought it was summer. My husband actually got a little sunburn from being outside! It was so good to feel the sun’s warmth on my skin.
Feeling a little too warm, I headed back in to cool off with a smoothie. When I was pulling out ingredients, my strawberries ended up next to the girl scout cookies. A light went on…those cookies would be awesome in a smoothie! A Strawberry Shortcake Smoothie…
I love fresh strawberries! That bright red color tells you strawberries are full of great antioxidants, such as anthocyanins and flavonols. Strawberries are also an excellent source of vitamin C, manganese, potassium, magnesium, vitamin K, folate, and fiber.
This smoothie is delicious! Fresh strawberries give it sweetness, the greek yogurt and banana makes it creamy. I crushed up a couple of shortbread cookies and sprinkled them on top. I love that with every sip you get a little cookie 😀

- 1 cup ice
- 1 cup almond milk
- 1 cup fresh strawberries, whole
- 1 small banana
- 4 oz 0 % plain greek yogurt
- ½ tsp vanilla extract
- 2 shortbread cookies
- Combine ingredients into blender in the order listed.
- Blend until smooth.
