I’m guessing by the amount of snow on the ground that el Nino is in full effect. We normally get some snow around this time of the year, but this is unusual. It definitely feels like winter!
The cold and snow seem to always been accompanied with gloomy skies. It’s days like these that I need to open all the blinds and let as much light in the house as possible to keep me in a cheery mood.
Along with a little sunshine, I like to have foods with bright fresh flavors. This Strawberry Oatmeal Smoothie does the trick. It’s cool, creamy, filling, and bursting with fresh strawberry flavor. There is no feeling blue when you are having this for breakfast!

Strawberries (1 cup, whole)

3g Dietary Fiber
85mg Vitamin C
35mcg Folate
220mg Potassium
- 1 cup water
- 1 cup fresh strawberries
- ¼ cup old-fashioned oats
- ¼ cup non-fat plain greek yogurt
- 1 packet stevia
- 1 cup ice
- Combine ingredients into blender in the order listed.
- Blend until smooth.
