Fresh Roasted Tomatillo Salsa

I love chips and salsa but, since moving I have yet to come across a salsa that I really enjoy. Luckily, on my last food-shopping trip I spotted tomatillos among the veggies! I just love, love Fresh Roasted Tomatillo Salsa. I picked up the other ingredients and headed back to make some salsa.  This salsa is quick to make and is loaded with fabulous flavor. 

Fresh Roasted Tomatillos Salsa

Lime juice gives this salsa a zesty taste that perfectly balances out the spicy serrano peppers.

Tomatillos kind of look like little green tomatoes but they have a flavor all of their own. Tomatillos have a papery husk that covers it as it is grown. When choosing tomatillos look for ones that have a filled husk.

To prepare tomatillos in any manner, you first must remove the husk and wash the sticky coating from the skin.

Fresh Roasted Tomatillo Salsa

Ingredients
  • 1 lb fresh tomatillos
  • 3 fresh serrano peppers, stems removed
  • 2 garlic cloves, unpeeled
  • ½ cup fresh cilantro, chopped
  • 1 small sweet onion, chopped
  • 1 tsp kosher salt
  • 1 fresh lime, juiced

Instructions
  1. Preheat broiler. Line a baking pan with foil.
  2. Remove husk from tomatillos and wash them to remove the sticky coating.
  3. Place tomatillos, serrano pepper, and garlic on prepared pan.
  4. Place pan in the oven on the middle rack.
  5. Roast for about 5-7 minutes, turning once to get charring on both sides.
  6. Add roasted tomatillos, serranos (seed peppers to control spice level) to food processor. Pulse 2-3 times.
  7. Peel garlic and add to food processor along with cilantro, onion, salt, and lime juice.
  8. Pulse 5-6 times or until salsa is an even consistency.
  9. Makes about 2 cups

  1. Tomatillo salsa rocks always! I do admit, I am lazy and buy it. But I will have to take a stab at making it myself.

    BTW…your post planted “kiwi” in my brain so deep, I went out and grabbed a dozen lol. Its like something out of Inception ;)

    • Awesome! I was at Costco and saw a huge container of kiwi. I don’t think I could eat that many but, good to know they are in bulk. lol

  3. Haven’t tried your recipe but it looks about right for when I’ve made it so I’m gonna go ahead and plop down 5 stars on it. It’s been awhile since I’ve had some or even thought about it. Perhaps it is time to fix a batch.

    • Thanks! It’s been a long time since I last made it too. After the first taste, I wondered why I don’t make it more often. It’s so good :)
