Sometimes you just need to mix things up a little to change your mood. The weather can make me feel lazy or an overall blah. So, when I see that I am getting into a funk first thing I do is turn on some upbeat music. Then, I open all the blinds and let as much light into the house as possible.  These two alone make a huge difference :D Finally, to crank it up a notch I make something that makes me think of warm sunshine…

A Tropical Pineapple Smoothie does the trick! It is light and perfectly refreshing :D

Pineapple is an excellent source of vitamin C and manganese. It is also a good source of vitamin B1, vitamin B6, and fiber. 

Vitamin C is needed in our bodies and is its primary water-soluble antioxidant. As an antioxidant, it protects our body against free radicals. Free radicals can attack and damage normal cells. Diets rich in vitamin C have been shown to be useful for preventing or reducing cardiovascular disease, cancer, and arthritis. Vitamin C has been famous for helping our immune system function properly to help prevent colds and flu.

Cut pineapple will retain its nutrients for about 6 days in the refrigerator.

To give the smoothie a little more dimension, I add a little mango. The flavor combination is unbelievably delicious!

 

Tropical Pineapple Smoothie

Serves: 1-2
 
Ingredients
  • 1 cup ice
  • 1 cup fresh pineapple, cut into chunks
  • ½ cup fresh mango, cut into chunks
  • 1 small banana
  • 4 oz 0% plain greek yogurt
  • 2 Tbsp milled flax seed
  • ¾ cup water
Instructions
  1. Add ingredients a blender in the order listed.
  2. Blend until smooth.

  1. Yes … Sunshine, please! We have a beautiful view out the back of our house onto a pond, and I hate having the blinds pulled any moment that they don’t need to be. But when there’s just no sunshine in icy-gray Ohio, even my huge windows still offer … NO SUNSHINE! Thank you, thank you for this gorgeous sunshine-in-a-glass!     • Shelley, I know what you mean. Sometimes our Colorado skies can be so gray too. I get so excited when the sun peeks out even for a few minutes! Winter is long here, so this Tropical Pineapple Smoothie is my sunshine in a glass. I’ll take what I can get :D

    • Samina, I hear you loud and clear my friend! I have days where all I want to do is lie down and sleep. It makes me feel so lazy. Thankfully, it doesn’t last long! Especially with a smoothie as good as this one. I up and ready to go :D
