I was listening to the radio and the DJ said he likes to call summer, skin season. After months of being totally covered up, this is when everyone is showing their skin. The tank tops, shorts, skirts, dresses, and bathing suits all make their appearance in order for people to show off their skin. Haha 😀

Nothing like knowing you will be showing off your body to make you fine-tune your diet. Quinoa has become a sample in our house. I love that it is easy to prepare and it is so versatile. With lots of fruits in season, I decided to combine a few of my favorite to make a fruit salad with protein.

Quinoa is an amazing seed that is prepared the same as rice: 2 parts water or broth to 1 part grain. Bring water and grain to a boil and reduce to a simmer for about 15 minutes or until liquid is absorbed. Super easy, right?!

What I love most about Quinoa is it is a complete protein, meaning it contains all the essential amino acids the body needs.  That makes Quinoa a good source of protein for vegetarians, people trying to reduce their meat consumption, and those with gluten allergies.

Quinoa is also a good source of fiber and it also provides iron, magnesium, potassium, folate, calcium, phosphorus, and vitamins A and E.

Couple all that goodness with the wonderful antioxidants in berries and this is one nutrient rich salad!

I love the textures of this salad. It has great mouth-feel and is super flavorful. To bring all the flavors together I squeeze the juice of one lemon over the entire salad and sprinkle it with some fresh basil.

Grab a spoon and dig in. It’s skin season 😀

Quinoa Fruit Salad

  • ½ cup quinoa
  • 1 mango, diced
  • ½ cup fresh blueberries
  • ½ cup fresh raspberries
  • 2 fresh basil leaves, thinly sliced
  • 1 lemon, juiced
  1. Prepare quinoa according to package directions.
  2. In a large bowl combine cooled quinoa, mango, blueberries, and raspberries.
  3. Pour fresh lemon juice over mixture.
  4. Sprinkle with sliced basil and serve.
Add 1 packet of stevia for a sweeter salad.

  8. I have never thought of using quinoa in a fruit salad! Such an intriguing idea and looks great. I know what you (and the DJ) mean about skin season. I’m not sure how I feel about it – on the one hand, I’m happy it reminds us to eat a bit lighter and fresher but a part of me can never get enough of the hearty stuff. : )

    • Thanks Monica. I’m not exactly sure how this recipe came to be, but I am so happy I pulled these ingredients together. It is really delicious and addicting. I need some serious control not to eat the whole batch myself 😀
      Skin season…the words kinda scare me. Just sounds like you are so exposed. Haha I definitely amp up my workouts this time of the year so I can continue eating everything that I love .

  10. Quinoa is a staple in our house too! I find it so much easier to cook than rice, for some reason my rice is always too hard or too soft, so I cook with it all the time! I always do savory dishes with it and have never even thought to make a sweet dish, how creative! This would be perfect for a summer, I mean skin season haha, fruit salad!

    • Oh my goodness, I have the hardest time cooking rice on the stovetop. It drives me crazy. It never, ever cooks right. It has to be the altitude here. Cooking certain foods is really tricky. I now have a rice steamer 😀 Even with that quinoa is still my favorite. It is really good as a sweet dish and it help balance out all the fructose.

    • Oh Helen, it is really great together. I used it in a spinach salad with fruit first and loved it and then decided to go all fruit and quinoa and it is great 😀

  17. Hi Cindy! Happy Friday from the Niagara Falls area.

    I love your fruit and quinoa salad, the issue I have with fruit is that is fluctuates my blood sugar if I have too much of it. I need that quinoa for that protein factor! I could eat this all day long! And I need that motivation to eat really healthy because the winter comfort foods did nothing for my figure. Oh well.

    • HI Laura! Happy Friday to you 😀 I totally agree with the blood sugar fluctuations. Even though fruit is great, too much can effect your blood sugar and the quinoa really is great for slowing down the digestion.
      Obviously, good eating is at the fore front of my thoughts as I love comfort foods and being totally bundled up all winter can make it easy to lose oneself 😀 Have a great weekend!

    • Thank you Norma 😀 It is delicious and the protein is great for slowing down the digestion, so their aren’t crazy spikes in blood sugar levels. Plus, it leaves you feeling full!
